Corn Bean Mush

Serves two to three

A thick mush, very good for supper with Garlic Bread or Cheese Toasties.

• 3/4 cup cracked kidney beans (grind coarsely in loosely set grain grinder)
• 1/4 cup dehydrated corn
• 1/4 cup corn meal
• 1/4 cup soy grits
• 3 tablespoons tomato powder
• 1 teaspoon onion flakes
• 1 teaspoon chili powder
• 3/4 teaspoon salt
• 1/4 teaspoon basil
• 1/4 teaspoon oregano
• 1/8 teaspoon garlic granules
• dash cayenne
• 1/3 cup Parmesan cheese, grated
• 1 teaspoon corn oil
• 4 cups water

All dry ingredients (except cheese) may be combined in one bag. Add to pot with cold water and oil and bring to a boil, stirring often. Place on low fire and simmer for 30 minutes, stirring from time to time. When done, remove from heat and stir in Parmesan cheese. Serve hot.
