Rice Curry

Serves two

A special meal served with chapatis and chamomile tea.

• 1 cup rice
• 1 chopped onion or 1 tablespoon onion flakes
• 2 teaspoons curry powder
• 1/2 teaspoon salt
• 1 tablespoon oil
• 3 cups water
• handful of each: dried apricots, raisins, dates, chopped pears
• handful whole or chopped almonds, cashews or peanuts

Heat oil. Add rice, onion, and curry powder. Sauté for a few minutes. Add water, cover, and simmer for 30 minutes. Add dried fruit and nuts, cover again, and simmer 10 minutes more. Remove from heat and let sit covered 5 minutes.

Garnishes: coconut, salted peanuts, wild onions, sliced fine.
Variation: use bulgar or millet, do not sauté.
