Stewed Fruit

Makes Approximately 2 to 3 cups

A light breakfast by itself, or with heated Chapatis and peanut butter. Add some spice and serve for dessert, hot or cold.

Soak 2 cups of any combination of unsulphured dried fruit overnight with water to cover 1 inch above fruit. In the morning, simmer 5 to 10 minutes. Omit soaking if fruit is exceptionally soft.

Good over granola, pancakes, grains, hot cereal, and Meal Cakes.

Variations: add lemon, orange, cinnamon, and/or cloves.

For Dried Fruit Jam: barely cover fruit with water and soak 10 minutes. Add 1 tablespoon honey per cup of fruit. Simmer ’til thick. Try apricots and dates together.
