Makes approximately 2 dozen
Crunchy, satisfying, and high in protein.
• 1 cup sesame seeds
• 1/2 cup coconut, grated or shredded
• 2 eggs
• 1/2 cup oil
• 1/2 cup honey
• 1 teaspoon vanilla
• 2 1/4 cups whole wheat flour
• 1/2 teaspoon salt
Toast sesame seeds and coconut until light brown. Combine wet ingredients (egg, oil, honey, and vanilla), then add the toasted seeds and coconut. Blend in flour and salt and stir well. Form into balls and 1 inch in diameter and place on cookie sheet. Press down with fork and bake at 325º F for 15 minutes.
