High Protein Almond Cookies

Makes Approximately 3 dozen

• 2 1/4 cups whole wheat flour
• 1 cup almond meal
• 3/4 cup oat flour
• 1/2 cup chopped pecans
• 1/4 cup soy flour
• 1/4 to 1/2 cup currants or raisins
• 2 tablespoons chia seeds
• 1 teaspoon coriander
• 1/2 teaspoon salt
• 1/2 cup apple juice or water
• 1/2 cup honey
• 1/4 cup oil
• 1 teaspoon almond extract

Mix all dry ingredients in one bowl and the liquid ingredients in another. Combine the two and blend well. Roll into balls, plae on ungreased cookie sheet and press down with a fork. Bake at 350º F for 15 to 20 minutes.
