Potato Cheese Soup

Serves two

• 1/2 cup dehydrated potato pieces or 1 unpeeled baked potato, chopped small
• 1/2 cup milk powder
• 2 tablespoons oat flour
• 2 tablespoons whole wheat flour
• 1 tablespoon onion flakes
• 1 tablespoon wheat germ flakes
• 1 teaspoon parsley flakes
• 1/2 teaspoon salt
• dash pepper
• 1/2 pound grated Parmesan or cheddar cheese, cut in chunks
• 1 tablespoon oil
• 4 cups water

Put all ingredients except cheese in cold water and oil. Stir well. Bring to boil, stirring all the while. Simmer approximately 5 to 10 minutes, stirring from time to time. Remove from heat, add cheese, stir well. Serve hot.
