Makes 2 dozen
Serve for lunch or supper. They take the place of bread and are tasty and crunchy.
• 1 cup whole wheat flour
• 1 cup rye flour
• 1/2 cup soy flour
• 1/2 cup wheat germ flakes
• 1/2 cup sesame seeds
• 1 tablespoon chia seeds
• 1 teaspoon coarse-ground sea salt
• 1/3 cup corn germ oil
• enough cold water to make a stiff dough
Combine dry ingredients, except salt, and mix well. Stir in oil and add water to make stiff dough. Knead a little and let stand a few minutes. Roll out dough very thin, sprinkle on salt and a few extra sesame seeds and roll again, pushing salt and seeds well into dough. Poke with fork, cut into desired shapes. Bake on an ungreased cookie sheet at 300º F until golden brown and crisp, about 15 to 20 minutes.
