Serves four to six
A favorite of ours. May be baked as a cake or served like shortcake.
•2 cups mixed dried fruit – apricots, apples, figs, prunes, raisins, pears, pineapple, dates
• large handful walnuts or pecans
• 1 tablespoon honey
• 1 teaspoon cinnamon
Cover fruit with water and stew 10 minutes. Add honey, cinnamon, and nuts and pour into buttered fry pan. Cover with the following batter:
• 1 cup brown rice flour
• 1/4 cup wheat germ flakes
• 2 tablespoons milk powder
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 2 tablespoons honey
• 1 tablespoon oil
• 1/2 cup water
Mix ingredients together and pour over fruit mixture. Cover frying pan and place in low-burning coals. Bake for 30 minutes or until crust is golden brown and springy to the touch.
Variation: If coal baking is inconvenient, or you want this quickly, cook fruit as usual and bake topping in small pancakes, making the batter thinner. Pour fruit over cakes and serve hot.
