Buckwheat Pancakes

Serves two to four

• 1 cup buckwheat flour
• 1/2 cup whole wheat flour
• 1/2 cup corn meal
• 1/2 cup wheat germ
• 1/2 cup milk powder
• 2 teaspoons baking powder (optional)
• 1 teaspoon salt
• 2 tablespoons oil
• 2 to 3 cups water

Pack all dry ingredients in one bag at home before you go. In camp, add oil and enough water to make a thick batter. If not using baking powder, make batter thinner. Bake on moderately hot oiled surface.

Variation: add wild berries, raisins, or dried bananas, chopped small.
