Serves two
This is a good recipe for one of the first nights out, when you still might have a baked potato left, and the fishing has been fine.
• 4 medium-sized trout, or enough for two
• 1 baked fresh potato, chopped fine
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 1/8 teaspoon thyme
• 1/8 teaspoon basil
• butter
• fresh greens, chopped: watercress, sorrel, dandelion, chicory
In small bowl, combine all ingredients except butter and greens. Stuff in and around freshly cleaned trout, laid out on a large piece of foil. Dot with butter and sprinkle in chopped greens. Seal foil and bake in coals for 30 minutes or so.
