Baked Trout With Buckwheat Stuffing

Serves two

A supper to make when you just know you’re gonna catch some. Put the groats on to soak while you fish.

• enough fresh trout for two
• 1/2 cup buckwheat groats
• 1 cup water
• 1 onion, sliced
• 1 lemon, sliced
• 1 garlic clove, sliced
• 1 tablespoon parsley flakes
• 1 teaspoon whole oregano
• 1/2 teaspoon dill weed
• salt to taste
• 1 tablespoon butter

Soak groats in water for 15 minutes and drain off excess water. Combine with onion, garlic, lemon, and seasoning. Rub cleaned fish with half the butter and stuff with groat mixture. Dot with remaining butter, wrap in foil, seal well. Place in coals and bake 30 minutes.
