Spicy Winter Squash Cakes

Makes approx. 1 Dozen

Crispy on the outside, soft on the inside. A good winter food with spice to warm you up.

• 1 to 1 1/2 cups cooked winter squash
• 1/2 cup dry garbanzo beans, soaked overnight and cooked
• 1/2 cup corn flour or whole wheat flour
• 1 1/2 teaspoons cumin, ground
• 1 1/2 teaspoons parsley flakes
• 1/2 teaspoon salt
• 1/2 teaspoon garlic granules
• 1/4 teaspoon cayenne
• 1 teaspoon olive oil

Mix all ingredients well and form into patties (about 1/2 inch thick and 2 1/2 inches across) on cookie sheet. Bake at 375º F for 30 to 40 minutes. Good with cheese or cold Peanut Butter Gravy.
