Soy Grit Patties

• 1/2 cup soy grits
• 1 tablespoon onion flakes
• 1/2 teaspoon oregano
• 1/2 teaspoon parsley flakes
• 1 bay leaf
• 1/2 cup whole wheat flour
• 1/4 teaspoon salt
• 1 garlic clove, minced, or 1/8 teaspoon garlic granules
• 1 cup water
• oil enough to fry in

Bring water to boil and slowly sprinkle in grits, onions, and herbs. Cover, and let boil until the water is almost completely absorbed, about 10 minutes. Remove from heat and add remaining ingredients. Let sit for 10 to 15 minutes, covered. Heat enough oil in frying pan to keep from sticking. Remove bay leaf. Form into patties and fry 3 to 4 minutes on each side. Serve with Peanut Butter Gravy, Tomato Sauce, gravy, or just plain soy sauce. Makes approximately 8 small patties.
