Miso Gravy

Makes Approximately 1 1/2 cups

• 1 small onion, sliced thin and chopped fine, or handful wild onions, sliced
• 2 tablespoons whole wheat flour
• 1/4 teaspoon ginger powder OR grated orange peel (optional)
• 1 teaspoon sesame oil
• 2 teaspoons miso
• 1 cup water

Heat oil; add onions and stir until they become a little transparent. Add flour and ginger and stir until onions are coated and flour starts to brown. Mix the miso into the water, and stir this into the other mixture. Lower heat and then cool only a minute or so longer.
