• 2 to 3 cups water
• 1 cup macaroni (wheat, buckwheat, soy)
• 1/4 pound cheese (cheddar, Swiss, Jack)
• 1/4 cup milk powder
• 1 tablespoon parsley flakes
• 1 garlic clove, minced, or 1/8 teaspoon garlic granules
Bring salted water to a boil. Add macaroni and cook ’til done, about 10 minutes. Drain. Add remaining ingredients. Stir over low heat until cheese is melted.
Variations: add canned tuna or shrimp; add chopped onion along with macaroni, omit draining; add a little chili powder and ground cumin; use buckwheat noodles and season with oregano; season with rosemary, basil, or savory; omit garlic and add chopped walnuts.
