We always carry a bag of breading mixture for frying trout. Here are a few combinations that we enjoy:
• corn meal, salt, pepper, sage (optional) to taste
• 1 part corn meal, 1 part corn flour, salt, pepper to taste
• whole wheat flour, salt, pepper to taste
• whole wheat flour, salt pepper, garlic granules, sesame seeds to taste
Clean freshly caught fish and while still wet, roll in mixture and fry. Fish will be done when flesh is no longer translucent and flakes away when pried with a fork. Sprinkle on a little lemon juice, if you like.
