Baked Eggplant Parmesan

Serves two to three

An easy meal for the first night out. Prepare for baking at home and pop in the coals when making camp.

• 1 unpeeled eggplant, chopped small
• 1/2 pound mushrooms, sliced
• 1 onion, chopped
• 1 green pepper, sliced
• 1 tomato, sliced (optional)
• 1 clove garlic, sliced
• parsley, chopped
• 1/2 teaspoon oregano
• 1/2 teaspoon basil
• 1/2 teaspoon dill weed
• salt and pepper to taste
• 1 to 2 cups grated mozzarella, cheddar, Swiss or Jack cheese
• 1/2 cup Parmesan cheese, grated
• 2 tablespoons butter

Combine vegetables and herbs and place in the center of a large piece of foil. Dot with butter and sprinkle on cheese. Wrap well and carry in a plastic bag. In camp, make a good fire and rake up a bed of coals. keeping a small fire going along-side. Put foil-wrapped meal in frying pan and nestle in the coals. Bake for 30 minutes. This can also be cooked without the pan on a grate over a very slow fire.
