Makes 1 Quart
A basic and nourishing broth, it is easy and cheap to make. It’s fine the way it is or with a little Parmesan cheese sprinkled on top. A good base for soup or stew. Try it with a fresh potato cooked in it. Or rice, lentils, wild greens, barley, croutons….
• 16 to 20 garlic cloves
• 1 tablespoon parsley flakes
• 1/4 teaspoon sage
• 1/4 teaspoon thyme
• 1 clove
• 1 small bay leaf
• 2 tablespoons olive oil
• 1 quart water
Combine all ingredients and simmer 30 minutes.
