Sesame Salt
Makes approximately 1 cup
Known as “gomasio” to some, this wonderful garnish not only heightens flavor, but also adds the valuable food energy of the sesame seed. In a short time you will find yourself sprinkling it on everything you ever used just plain salt on.
• 1 1/4 cup sesame seeds
• 1/8 cup sea salt (or to taste)
Roast sesame seeds, combine with salt. Grind in suribachi, with mortar and pestle, or even a blender. Store in airtight container.
