Serves two
• 6 ounces noodles, spinach, sesame, or soy
• 1/4 cup dried mushrooms, sliced thin and chopped fine
• 1 tablespoon onion flakes
• 1 tablespoon vegetable-seasoned broth powder
• 1 tablespoon parsley flakes
• 1/2 teaspoon oregano
• 1/2 teaspoon salt
• 1/4 teaspoon garlic granules
• 1/4 teaspoon pepper
• 1 tablespoon olive oil
• 4 cups water
• 1 teaspoon tamari soy sauce
Bring water and oil to boil. Add all other ingredients, and bring to boil again. Cover and keep at a high simmer for 10 minutes. Add tamari at end.
Garnishes: squeeze of lemon; Parmesan or romano cheese, grated; toasted sesame seeds; fresh wild onions, sliced very fine.
