Wakame

Serves two

A seaweed condiment for rice and other grains.
• 1/4 cup dried wakame, cut in 1/2-inch lengths
• 2 tablespoons onion flakes
• 1/2 cup water
• 1 teaspoon oil
Soak wakame and onion in water for 15 minutes. Strain and reserve liquid. Put oil in bottom of frying pan; add seaweed and onions to pan and stir fry for a few minutes. Add broth and bring to a boil. Reduce heat and cook 5 to 10 minutes.
Garnishes: 3/4 teaspoon lemon juice; 3/4 teaspoon tamari soy sauce; stir in 3/4 teaspoon miso paste.
