Oatmeal Hotcakes

Serves two

Good for mornings when you want to eat a lot. These are sweet and filling.

• 2 cups oatmeal (whir in blender or grind until most of it is a flourlike consistency, with some of it still in small pieces)
• 1/2 cup milk powder
• 1/4 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1/4 teaspoon salt
• 1/4 cup date sugar (optional)
• 1/4 cup currants or raisins
• 1 tablespoon sesame seeds
• 1 1/2 cups water

All dry ingredients may be kept in one bag. In camp the night before, combine ingredients with water in a bowl, cover, and let soak overnight. The next morning, make large cakes, about 3 inches across and 3/4 inch thick, and fry slowly in a little oil. Very good with maple syrup or Honey Syrup and butter.
