Iriko

If you get a chance to go to Chinatown, or to a place where they carry Chinese or Japanese products, you might see these very small dried fish, about 2 inches long, also called Niboshi. These are very lightweight and a real treat for a snack. They are very high in protein, as the whole fish is eaten, bones and all.

Oil bottom of skillet, put in a handful of dried fish. Grown until toasty and crunchy, sprinkle with soy sauce, and stir a little bit more. Remove from pan and cool on plate.
